đ„With some filo pastry leftover in the fridge, my daughter and I made these quick samosas for lunch. Probably took 20 mins to make all in all, 10 mins to bake in oven. (You could make the mixture and leave in fridge to use another time.)â

đ„I served with coconut yoghurt, mango chutney, some chopped little gem for freshness. But they are FULL of veg so they stand alone as a super nutritious lunch.â

Recipe:

âšHeat oven to 200C. Grease baking tray.â
â
âšPeel and cube the potatoes quite small, then cook them and some red lentils⊠cover with boiling water mine took about 8 mins to cook, enough time to get the rest of the filling made.â

âšFry an onion with garlic, ginger and turmeric.â
â
âšAdd a grated carrot, frozen peas, a few frozen chopped beans, spinach, or any other veg to hand, chopped up smallâŠ.â

âšI added 1 tsp of each of the following spices: mustards seeds, garam masala, turmeric, curry powder, cumin seeds, salt. BUT any one of these, with a basic curry powder would be fine.â

âšFinally add the cooked lentils and potatoes. Cook for a few mins until everything is combined and cooked through.â

âšUsing butter or vegan butter depending on your preference, melt about 15g.â
â
âšUsing half a sheet of filo pastry at a time, put a spoonful of mixture on the sheet in a corner and fold over - as you can see itâs all a bit random what shape you end up with, but thatâs half the fun of itâŠ. Just fold over, trying for a triangle shape, and brush melted butter to seal the pastry.â

âšPlace on tray and brush with a little more butter.â

âšBake for 10-15 mins at 200 until golden.
